STRAWBERRY VINAIGRETTE

Strawberries and Spring just go together! You know what else goes together? Homemade Strawberry Vinaigrette to toss with our refreshing Strawberry Spinach Salad!

This dressing is fast and easy to make, and it will keep in the fridge for several weeks. The flavors of this dressing make for a great marinade for pork or salmon as well. Yum!

Ingredients

-        Strawberries – 1 cup of very ripe strawberries, chopped

-        Vinegar – ¾ cup of any vinegar you like – white balsamic, rice, coconut, apple cider, absolutely any vinegar.

-        Sugar – 1 tablespoon

-        Garlic – 2 cloves, crushed

-        Rosemary – a few sprigs, or any other fresh herb

Procedure

Place all ingredients in a saucepan, bring to a boil, cover and simmer on low for 10 minutes. Cool. Puree. Strain, and transfer to a jar. When you are ready to use, just add ¼ cup of olive oil to the jar and you have the perfect salad dressing, or marinate!
