CHICKEN CACCIATORE

Sometimes our best dinner celebrations, are right in our own home!

When an evening calls for a special occasion, I love to play “theatre”! Set the stage with ambiance, eye candy, and great food and wine. The evening can linger into the wee hours of the morning, which makes the time: YOURS!

The meal should be simple to prepare, yet equally match the ambiance you have created. CHICKEN CACCIATORE, with a side of Zoodles, and a loaf of crusty Homemade Bread, are just the dining experience for a fun filled evening!

Let’s Make It.

INGREDIENTS: For Two

-        Chicken thighs – 4, skin on

-        Dredging Flour – seasoned with salt and pepper

-        Onions – 2 cups, chopped

-        Tomatoes – 2 cups, chopped

-        Garlic – 2 cloves, crushed

-        Black Olives – ½ cup, chopped

-        Fresh Herbs – ¼ cup

-        Red wine – 1 cup

-        Olive oil – as needed, and 2 tablespoons of Butter

-        Salt & pepper – to taste

Instructions

Dredge chicken on both sides in seasoned flour. Place dredged chicken in a hot pan, coated with a little olive oil. Sear both sides until crispy. Remove from pan.

Add onions, cover to sweat. Add tomatoes, garlic, black olives, herbs, salt/pepper, and wine. Give a stir. Replace chicken, cover, and simmer until chicken is cooked, (30 – 40 minutes).

This is an easy do ahead meal, which gives you time to set the romantic stage, and get dressed!
