VEGAN MEATBALLS

You don’t have to be Vegan to enjoy a delicious meatless dish!

These Vegan Meatballs are full of healthy, delicious ingredients, and you can adjust the spices you personally like to add, though I am finding the addition of smoked salt, or peppers, give these meatless-meatballs a kind of bacon flavor.

The dish is simple to make, even though it has three separate steps which can all be done at the same time:

-        Cook the lentils

-        Saute the vegetables

-        Puree the corn and herbs

INGREDIENTS

-        Broth – 2-3 cups (store bought vegetable broth or homemade)

-        French lentils – ¾ cups dried lentils

-        Amaranth – ¼ cup, a tiny, yet delicious seed-like grain

-        Onion – 1 medium, grated

-        Rainbow Carrots –1 cup grated, just the yellow and white ones

-        Mushrooms – 1 cup, grated

-        Garlic – 2 cloves, crushed

-        Tomato paste – 2 tablespoons

-        Corn – 2 cups, fresh is best

-        Fresh Herbs – a handful, Parsley and Oregano

-        Salt and Pepper to taste – preferably smoked

-        Chipotle Seasoning – ½ teaspoon, or as you like

-        Egg – 1 egg is Optional

Instructions

Lentils. Place broth, lentils, amaranth, and seasoning in a pot and simmer covered for about 30 minutes. Stir occasionally. Make sure lentils don’t dry out while cooking. Just before they are done, add the tomato paste and blend into the mixture, mashing a few of the lentils so as to thicken the mixture.

Vegetables. With a little olive oil in a pan, saute the onions, mushrooms, carrots, and garlic. Spoon a little of the broth from the lentils into the mixture, cover and simmer on low just until everything has softened.

Corn. Place the corn and fresh herbs in a blender/processor and puree.

Combine. Mix all three separate components of this preparation together. Let it cool. You can add 1 egg at this point if you are not totally strict vegan, though the mix holds together nicely without one. It was just my choice.

Oven on 350. Parchment paper lined baking sheet. Spray/rub a little oil on the paper, not so much for it sticking but to brown the bottoms a bit.

Scoop little balls out onto the prepared pan. Bake 20 minutes.

At this point the balls are ready for a sandwich, on top of a salad, separate in a lunch container,

or… ‘on top of a Pizza’!
